Buckwheat & parmesan waffles

Serves 2

Ingredients

  • 120 g buckwheat flour
  • 30 tapioca flour
  • 1 tsp baking powder
  • 2 eggs
  • 1 tbsp olive oil
  • 185 ml lactose-free or dairy-free alternatives milk
  • 50 g parmesan, finely grated
  • 2 tbsp apple cider vinegar

  1. Mix all the ingredients together in a bowl until well combined
  2. Preheat the waffle maker
  3. Once heated, use a paper towel to grease the waffle maker with oil and pour ~1/4 of the mixture into each iron. Cook for about 5 minutes. The waffle need to be slightly golden
  4. Serve them with a poached egg and 1/4 per serve of avocado or as they are!
