What is better than a coconut milk, carrots & sweet potatoes (spicy) soup for a cold winter?
Here one on my favourite soup which can suit for those following a low FODMAPs diet (LF).
Coconut milk carrots sweet potatoes soup ingredients
- Sweet potato (75 g/portion if LF)
- 1 potato
- 2 carrots
- 10 cL of coconut milk (no canned)
- 150 g spinach
- Ginger, curry, cumin, paprika, turmeric, coriander
Cook carrot, sweet potato and chopped potato in water with chopped ginger for 20 min and the other spices (according to your taste).
Mix and then add coconut milk and spinach. Heat for a few minutes.
Season to your liking: sprinkle with sesame (max 10 g if LF) or other seeds (watch out for the quantities), fresh herb and/or drizzle with cold pressed hemp oil.
